Cultivation:
No chemical herbicides,  ploughing throughout the growing season.Hand-picking


Vinification & elevage:
Light pressing followed by 24 hours' static settling, then transfer to barrels. Fermentation and elevage in barrel (25% new wood). Lees-stirring in winter.


Racking:
Before following year's harvest.


Bottling:
16 month after harvest, with regard to the lunar cycle.
